Owners, Mark & Louise Smith, and Head Chef, Darrell Haylett, welcome you to The George.

Originally a private residence belonging to the Dartington Family, the ‘George’ opened as a Coaching Inn in 1679 in the quiet, beautiful and quaint village of Spaldwick. Situated beside the old Manor House and overlooking the village green, it is the quintessential Old English Country Pub complete with recognised Restaurant.  Easily accessible from both the A1 and A14 trunk roads, we are ideally placed for those travelers and locals wishing to find a serene and pleasurable place to visit which offers service and facilities second to none.

The George is owned by Mark and Louise Smith. Since this new and vibrant team took over The George, it has been highly successful in all aspects and has quickly become a centre of excellence, for its fine food and for the traditional village ‘pub’.

The George boasts two large inglenook fireplaces and original swathing beams throughout, coupled with comfortable leather sofas and solid wood tables and chairs, although modern, in keeping with the historic features of the original building. The atmosphere is enhanced by the background sounds of laughter, gentle conversation and the sounds of those anticipating a pleasurable evening ahead.

Our staff hiring policy is to employ those who, by nature, are friendly, bubbly, dedicated to the customer’s needs and who give a thoroughly professional service at all times so that our guests find their visit to the George is a relaxed and perfect outing.

The George is an exceptionally ‘long’ building which enables us to provide two distinct experiences.  The first portion of the building as the ‘village pub’ offers everything that a country pub should with a range of real ales, draught and bottled beers and a broad range of minerals. A complete selection of wines, many offered by the glass, and spirits are available for our drinkers as well as our diners.  Bar menu, Quiz nights, village events, charity fundraising events and a Golf Society provide the village with a centre for social activities.

Adjoining the bar area is our Restaurant – recognized in the Michelin Guide, AA Best Pubs, AA Good Food Guide, and Alastair Sawday’s “Special Places”, to name but a few.

The restaurant is a large converted barn with high ceilings, large beams and wood flooring. Subdued lighting and soft background music lend to the atmosphere of unhurried, relaxed enjoyment adding to the anticipation of a most pleasurable evening.

Darrell Haylett is our Head Chef.  Darrell holds an impressive CV having been employed by some of the most famous restaurants in the country & in Europe, as well as being part of the Huntsbridge Group during his career. He brings to the George an unrivalled talent of which we are justly proud. Darrell runs his kitchen with an attention to detail, hygiene and a passion for excellence that only perhaps a chef would understand. Darrell is assisted by his team of four other chefs.  Michael Singh is Darrell's Sous Chef, again one who brings a wealth of experience and passion to the kitchen. Darrell and Mick work closely together creating menus, producing dishes and ensuring the same consistency and standard demanded by our customers also meets their own exacting levels of excellence.  Our Pastry Chef, Chef de Partie and Commis Chef make up the highly valued kitchen team who strive together to ensure that only the best of the best leaves the kitchen to be enjoyed by our valued customers.

Our menus are a classic mixture of Mediterranean, British and French. They are changed on a six weekly basis to ensure a degree of anticipation for the customer; but primarily to enable us to provide constant fresh, seasonal produce. All foodstuffs are sourced locally as we understand the importance of supporting the local farming and business communities. For example, our meat is from T & S Thomas in Godmanchester, who supply only locally sourced breeds; our fruit and vegetables are from carefully sourced local farms; our eggs from Ellington; and most local of all, herbs from our very own herb garden. We also run a  ‘Chef’s Specials’ board which changes daily and always proves very popular with our customers.

All dishes are cooked fresh to order with absolutely everything on the menu being homemade, including our sausages, black pudding, ice creams…even our ketchup is homemade! Our different flavoured homemade breads, include sundried tomato and gruyere cheese; sesame and poppy seed roll; sunflower and pine nut cob. We also have a sweet menu of mouth watering delights which is the death knell for our customers who are trying to diet.  Freshness, quality and presentation are our byword and by the comments of our satisfied customers would indicate we have got it right!

Our aim is service – service – service, customer first last and always!  Listening and observation give us the indications of where we are doing things right, where perhaps we are doing it wrong and where we can improve.  Action, if required, is immediate and thorough, with on-going training for staff paramount.

The George also offers conference facilities, private dining room, ‘at home’ catering service and a picturesque venue for weddings & private parties etc.
